Meatless Monday Recipe – Spicy Thai Broccoli Salad

I have partnered with Goya Foods for feature

 #MeatlessMonday

What is your Meatless Monday go to dish? Goya challenged me with a creative Meatless Monday recipe and I had to use Goya Coconut Milk and/or Cream of Coconut. This recipe is a hybrid. I make a peanut sauce we all love and then took the contents of a standard broccoli salad and instead of the vinegar and mayo, I used my peanut dressing. Hence, the Spicy Thai Broccoli Salad. It was a hit!

My peanut sauce has a bit of a twist from a standard peanut sauce recipe. I use coconut milk and instead of red pepper flakes I use chili powder. It has a kick! The key thing to note is my peanut sauce recipe makes more than you need for the broccoli salad, so keep the rest in a jar to use for another meal that week!

Goya has partnered with the Meatless Monday campaign to promote Goya;s “Can Do” initiative. For every can of Goya Coconut Milk purchased in November and December, Goya will donate products to Feeding America. The food will then be distributed to families in need at local food banks across the country. The ‘Can Do’ campaign is part of Goya Gives, a national initiative committed to supporting local communities through social and environmental causes.  By the end of the year, Goya will donate at least 600,000 pounds of food.

Winc Wine Club Monthly Deliveries

In partnership with US Family Guide I was sent product from Winc

What a perfect time of year to try a new wine service. I was able to build a wine set at Winc and I will tell you how well it works. It is a Winc Wine Club where wine is delivered to your door monthly.

You tell Winc your preferences of red versus white wine or a mixture of both. You also answer a few questions about flavors and tastes to narrow down the varieties that are a right match for you. Then Winc gives you your suggested wine list.

You can change that list. Perhaps you fell in love with a wine last month and you want to make sure it gets back into the mix again. Just visit your shelf and make any changes you want. I like to gift wines so a lot of times I even choose a wine based on the label art.

You can save!

Save $22 Off Your First Month of Winc available only through this link – www.trywinc.com/usfamilyguide. Winc offers 4 personalized wines each month. Bottles start at $13 each.

Mint Brownies with Vodka Recipe

The recipe is my own and I was supplied product from Khor Vodka for feature

Have you ever baked with alcohol? I haven’t, but have read many articles and recipes and adding vodka or even some rum to recipes is actually quite easy. Children? I typically will not serve kids baked foods with alcohol because not a lot of alcohol evaporates when baking. If I cook and boil (sauces) with vodka then I feel much better about serving to the entire family. So, these brownies are for the office party and adult time. Although I use very little in this recipe (under 1/4 C for the entire dessert).

So, let’s give it a try and I am taking you on a journey as I make my first Brownies with Vodka. I actually just add a little vodka to a standard homemade brownie recipe. I will also add mint chips because chocolate brownies are delicious, but mint chocolate brownies are divine!

In the recipe I used Khor Vodka. Khor “uses a local organic filter containing schungite (a unique natural mineral) which allows it to get as close as possible to the structure of natural water.  The filtration process is further enhanced with special birch and alder-tree charcoal and quartz sand sourced near the famous Ural Mountains.” If I am going to start baking with alcohol, it has to be premium and natural or I feel like you won’t get the taste that is preferred.

Four Ingredient Protein Cookies with Premier Protein #TheDayIsYours

I am a Premier Protein Ambassador and have partnered for this sponsored feature. Recipe is my own

Four Ingredient Protein Cookies with Premier Protein #TheDayIsYours

I am writing this on August 1st and this was the date I gave myself to start back into a new regimen. The past month I have been to Las Vegas, NYC and moved to a new town into a new built home and am all unpacked. Now I wipe that sweat off my forehead and get back into healthy habits. While waiting for the home build to complete we lived in a hotel for 3 weeks. I had to learn to cook with simple ingredients because of the small space and lack of food I brought to eat off of until we can move into the house. These were a favorite and so easy to make. Just 4 ingredients and we had cookies with very low sugar and packed with protein.

I had found similar recipes online and just gathered a few, added the ingredients I liked and this was the result. It is so easy and often can whip these up quicker than a batch of french toast in the mornings. Then we can grab and eat them out the door or pack the in our lunches.

Four Ingredient Protein Cookies

  • 2 Ripe Bananas
  • 1.5 Cups Oats (I like to use organic oats)
  • 1/2 Scoop of Premier Vanilla Milkshake Powder
  • 1/3 Cup chocolate morsels ( or any addition that fits for you-raisins, nuts, etc)

Mix all together and spoon into 2″ drops onto a greased cookie sheet. bake 20 minutes at 350 degrees.

Why do I recommend Premier Protein Powder? You get 30 grams of protein per scoop and only 3 grams of sugar. There are no artificial flavors, colors or sweeteners and it is gluten free. Make sure the protein products you consume offer the best ingredients like Premier Protein. Other brands out there may contain artificial ingredients and synthetic nutrients so you really want to do your homework and choose wisely.
