Lemon Garlic Chicken Legs Instant Pot Recipe

Instant Pot Chicken Recipe

My husband and I stared a low carb diet and he is watching his red meat intake. This leaves us having to get real creative on cooking poultry, lean pork and seafood that isn’t loaded in sauces and cheeses. I have had an Instant Pot for a few months now and had only used it twice because I feel lost in how to use it. Then I got The I Love My INSTANT POT Recipe Book.

Instant Pot recipe

I chose to recreate the lemon garlic chicken legs recipe that is in the recipe book. It was so easy and cooked up great. My husband son and I polished them off. I even had leftover lemon and garlic for the asparagus.

Lemon Garlic Chicken Recipe

  • 1/3 C Olive Oil
  • 1/4 C Fresh Squeezed Lemon Juice
  • 1 Tbsp Lemon Zest
  • 4 Garlic Cloves (minced)
  • 1/4 Tsp Sea Salt
  • Pinch of Cayenne Pepper
  • (I also adde pinch of smoked paprika)
  • 2 Lbs. Chicken wings or legs
  • 1 C chicken broth

Mix all but chicken and broth. Add chicken and marinade in fridge for at least 1 hour (I threw all in a large ziploc to marinade). Add chicken broth to the pot. Insert a steam basket (I don’t have one yet so used tad less broth and laid in there-came out great). Fix so not overlapping. Lock Lid. Set to manual 10 minutes. When timer beeps, let pressure release naturally for 5 minutes, Then quick release pressure until float valve drops and unlock lid. Place cooked chicken onto parchment-lined baking sheet and put under oven broiler for 3-5 minutes until browned.

Protein Recipe: Vanilla Cinnamon Protein Icing #TheDayIsYours

I am a Premier Protein Ambassador. Opinions are my own and compensation for my stories was given

Vanilla Protein recipe

Premier Protein shakes and bars have been a part of my daily diet routine for several months and in January I was honored to become an ambassador for them on the blog. Because I grab and go for breakfast when I have my shakes, I have been getting creative with the tubs of protein powders I have. I cut down on flour when making muffins or waffles and replace with the protein powder and my new favorite is protein icing.

Last month I shared how I incorporate protein into my daily diet with the right times to consume protein in your days. Now I am sharing my Vanilla Cinnamon Protein Icing recipe. It is so simple and quick to make. The best part is you can make a single serving at a time or a larger batch for baking.

In a small bowl add the scoop of protein mix. Gradually add water about 1 tbsp at a time until you get the icing consistency you want (about a tad under 1/4 cup of water total). It will end up very sticky and you know you are close-add a bit more and you will get the icing you desire. Sprinkle a pinch of cinnamon and stir in. Let sit 1 minute. Makes enough to frost about 3-4 muffins or 2 large waffles.

*Hint: If you want a bigger batch-just add more powder and water. If you ice a large cake or muffins. It is even better if you make and icing ahead and refrigerate about 1 hour before eating. This makes the icing an even better consistency for slicing and serving.

Why do I recommend Premier Protein Powder? You get 30 grams of protein per scoop and only 3 grams of sugar. There are no artificial flavors, colors or sweeteners and it is gluten free. Make sure the protein products you consume offer the best ingredients like Premier Protein. Other brands out there may contain artificial ingredients and synthetic nutrients so you really want to do your homework and choose wisely.

Do you use protein powders when baking? Give it a try. I make waffles, biscuits, muffins, cookies and even cupcakes.

Protein Cinnamon Pudding Recipe with Justin’s Almond Butter

Justins Protein Pudding

With the new year here and resolutions in full swing it can become redundant after some time of making changes. Perhaps you have already found excuses to miss the gym. Maybe that fast food restaurant was truly out of convenience even though you swore them off weeks ago. For me, I wanted to eat more balanced-not diet-just balanced and healthier.

Protein has become a nutrient I am eating consistently more and the more I pay attention to protein products, the more I realize how fun I can have creating foods that offer me the protein I need without unhealthy additives. One of my favorite snacks to quickly whip up is protein pudding (or ice cream if you freeze this recipe then eat).

Justins snacks

In this recipe I used some favorite brands-Justin’s Almond Butter and Premier Protein Vanilla Whey Protein shake mix and milk. That’s all you need. Justin’s gives you the peanut and almond butters with only real ingredients. Make sure you choose a protein whey brand that also doesn’t have additives and is low in sugar too.

Justins

Protein Pudding Recipe

  • 1 scoop of vanilla whey protein powder (I use Premier Protein so they have double scoops-in this case use 1/2  scoop)
  • 1 -2tbsp of Justin’s Almond Butter-any flavor variety
  • 3-4 tbsp milk or almond milk
  • Dash of cinnamon (optional)

Stir all ingredients together adding milk a bit at a time until you get a pudding consistency. This makes 1 serving. You can eat as is or freeze for protein ice cream. Top your pudding with cinnamon or granola but it is full of flavor as is.

Pokemon Valentine’s Day Card Pokeball and Card

Pokemon cards

Hello Pokefans! My 8 year old son was on the hunt for Pokemon cards so we took a peek as we were out and about last weekend. We found a lot of fun cards but no Pokemon. So I told him we may need to make our own. So for 2 days my brain turned until I came up with this idea.

All you need is red, white and black construction paper (you can get 2 cards from one sheet of each color), scissors and a glue gun. We actually found pokemon cards at the dollar store but you get 3 to a pack for a dollar so you can buy several there or purchase pokemon cards at a bulk price and save in the end.

I found a small planting pot that became the perfect size for the card. You want the card to end up at almost double the width of a pokemon card that will slide in the pocket you create.

I cut enough red circles out at the full size (we need 26 cards for his class). I then cut 13 white circles then cut each circle in half to be the bottom of the pokeball.

I measured out a good width of black papers in the correct length using the red balls I cut as a size guide. Then cut 26 black circles (I actually used the lid of an Excedrin bottle for center black circle-hey! it worked). Then cut my own smaller 26 white circles. Now I have all I need to start glueing.

I simply lined the inner curved edge of the white half-circle with hot glue in thin line, leaving the straight edge free of glue (this is your pocket for the pokemon card). I then glued the black strip to the white paper of the pokeball by lining lower edge only so that the top edge is free with the pocket. Then I glued the black circle in the center and smaller white circle on top in layers so you get what is pictured.

Stuff a Pokemon card in the open pocket between large red circle and white half circle and you have a Pokemon Pokeball Valentine card that is sure to be a hit. We wrote ‘I CHOOSE YOU’ with a fine tip sharpie, but you can get creative there. He added his ‘From:…’ on the back of the card.
