My husband and I stared a low carb diet and he is watching his red meat intake. This leaves us having to get real creative on cooking poultry, lean pork and seafood that isn’t loaded in sauces and cheeses. I have had an Instant Pot for a few months now and had only used it twice because I feel lost in how to use it. Then I got The I Love My INSTANT POT Recipe Book.

I chose to recreate the lemon garlic chicken legs recipe that is in the recipe book. It was so easy and cooked up great. My husband son and I polished them off. I even had leftover lemon and garlic for the asparagus.

Lemon Garlic Chicken Recipe

1/3 C Olive Oil
1/4 C Fresh Squeezed Lemon Juice
1 Tbsp Lemon Zest
4 Garlic Cloves (minced)
1/4 Tsp Sea Salt
Pinch of Cayenne Pepper
(I also adde pinch of smoked paprika)
2 Lbs. Chicken wings or legs
1 C chicken broth

Mix all but chicken and broth. Add chicken and marinade in fridge for at least 1 hour (I threw all in a large ziploc to marinade). Add chicken broth to the pot. Insert a steam basket (I don’t have one yet so used tad less broth and laid in there-came out great). Fix so not overlapping. Lock Lid. Set to manual 10 minutes. When timer beeps, let pressure release naturally for 5 minutes, Then quick release pressure until float valve drops and unlock lid. Place cooked chicken onto parchment-lined baking sheet and put under oven broiler for 3-5 minutes until browned.

Mini Golfing at Meadowbrook Family Fun Center in Yakima, Wa

My husband travels the state and a tad beyond for work. In the summer and on school breaks my so and I like to tag along with him. This leaves us roaming new towns while he works the days exploring and finding things to do.

In a recent trip to Yakima, Wa we came across the Meadowbrook Family Fun Center. It had mini golf, bumper boats, batting cages, go karts and an inside arcade and restaurant. A little kid heaven all in one parking lot. He chose mini golfing (no comments on his golf swing form).

It is an adorable Old west theme. It is lined with mini town bbuildings labeled and each hole has fun features as you move through.

This is a fun place should you find yourself in the area. A day of fun we ended by seeing Boss Baby in the local theater and lunch at Miner’s Landing.

Those Easter baskets can be so hard to fill sometimes. We have 3 boys ages 8, 19 and 25. That is a child, college student and adult. I can’t buy packs of Pokemon cards and split and one boy likes chocolate and one is trying to stay away from sweets. The youngest has a list full of wants and then the older boys have needs. So what seems to be a good divide? Socks, sweets and unique school supplies.

Imagine it is the year 1914 and you can order wrapped snacks to be delivered that were baked fresh that same day. Of course this was a small business in a small town. Today they are Tastykake and offer everyone fresh-tasting individually wrapped snacks.

I only wish I could locate these in retailers near me. According to their website they are available in supermarkets and other retail outlets throughout the East, Southeast, and Southwest. The kids will love these sweet treats in Easter themes.

Remember when getting socks was the worst gift ever? Then remember entering adulthood where you have to budget every item you buy and getting socks becomes the best and most useful gift ever? I love getting socks and with older children they appreciate the gifts that stock them up on everyday items they now don’t have to go out and get themselves.

The reason why Gold Toe socks make a great gift is that they have styles and fits for everyone. I love Gold Toe because I wear ankle socks most and they never slip into my shoe. I have bought so many socks that slip when I walk or wear after just a few washes and have to toss them. My Gold Toe socks last and stay put.
