When I was first sent the wines I started browsing the Holland House website and found their recipe page. I saw a recipe for Chicken Piccata on Campanelle with Lemon Butter Sauce and I had all of those ingredients already in my fridge and cupboard. I followed the recipe and it was a hit! I will share that recipe below!

Chicken Piccata on Campanelle with Lemon Butter Sauce (from Holland House recipes)

Ingredients:

  • 4-6 boneless chicken breasts, sliced into 1 inch long and ½ inch wide pieces
  • 1 lemon, halved
  • 2 tsp. garlic powder
  • ½ tsp. kosher salt
  • 1 tsp. fresh ground pepper
  • 15 capers
  • ⅓ cup Holland House White Cooking Wine
  • 1 box of campanelle pasta
  • 1 stick butter, unsalted

Directions:

  1. Combine chicken, garlic powder, salt, pepper, cooking wine, juice from half a lemon and 10 capers. Cover and refrigerate for 2 hours.
  2. Bring a large pot of salted water to boil. Add the pasta and cook until al dente, according to package directions. Drain and keep warm when done
  3. Combine the butter and juice from the remaining lemon half in a small saucepan. Whisk together and cook on low heat. Add the chicken and marinade to the saucepan and cook thoroughly.
  4. Transfer pasta to plates and top with chicken and sauce. Garnish with remaining capers.

Eating out just got healthier. If you have visited a Denny’s Restaurant you may have noticed the Fit Fare® logos on some menu choices. These logos tell you the calories and other nutritional information about that dish that qualifies it as a Fit Far® menu selection. The Denny’s Restaurant Fit Fare Menu offers the healthiest choices and we sampled some with my family.
With choices like Banana Pecan Pancakes and Alaska Salmon, you get a healthier plate without the lack of taste or variety. The sides may be turkey bacon or a bowl of fresh fruit so you stay on track. These selections make eating out a less guilty of a pleasure.

Within the Deny’s menu you can easily spot the Fit Fare® meals by the heart icons under the descriptions. I chose the Banana Pecan Pancake breakfast. My son never passes up chicken nuggets and from a kids menu but with sides like garden salad, sliced bananas, corn and fresh fruit he can choose from on the kids meals he eats balanced as well!
The next time you want a good meal with more food than most can eat at one serving, Denny’s has a great value in their menu and for the healthiest picks, look for the Fit Fare® logos!

Homemade Honey Mustard Recipe using Colman’s Mustard

Honey Mustard is one of the most popular dipping sauces for so many foods. You can order it with your take-out foods or buy it in a bottle. A while back, I was googling how to make one of our favorite honey mustard recipe sauces we have ever tried while out to dinner at TGI Friday’s one night. I wrote down a copycat recipe and use it often. I changed it a bit adding more honey and less sour cream to our taste.
When I got my hands on some Colman’s mustards, I knew it was worthy for our dipping sauce recipe! If you think mustard is just mustard and they are all the same, you have not tried the yellow-labeled Colman’s mustard compared to some other brands I have tried.

Homemade Honey Mustard Sauce
1/2 cup mayonnaise
1/2 cup sour cream (I use a bit less than 1/2 C)
1 TBSP white vinegar
5 TBSP honey
Mix well and refrigerate before using at least an hour for best flavor.

Lemon Chicken & Pasta #Recipe

I found this recipe through a recommendation and my family loves it. I wanted to share how easy it is to make. I was looking for  unique dish away from the same old chicken dishes I make. I had a fridge of thawed chicken breast and when I saw the ingredients in this recipe, I knew it would be a hit and it is fun to make!
The Ingredients

  • 6 Boneless chicken breast halves (or so)
  • tablespoons Dijon Mustard
  • Italian seasoned breadcrumbs
  • 1/2 cup butter (only butter- I used unsalted. No substitutions)
  • tablespoon finely grated lemon rind
  • Juice from 1 large lemon
  • teaspoon salt
  • Black Pepper
  • 12 -16 ounces fettuccine, cooked 
Directions

Brush each chicken breast liberally with the Dijon Mustard. Don’t tell the kids it is Dijon-they will not taste it in all the other ingredients later-Shhhh!

Roll in Italian Bread Crumbs and lay all in a 13×9 Baking Dish
In a small saucepan melt the butter, add the lemon zest and squeeze the juice from the large lemon. Add the salt and pepper to taste and boil/stir. Pour over the chicken
Bake at 350 degrees for 45 minutes-basting with the lemon mixture every 15 minutes. I made a little extra butter mixture to add half way through cooking just to make sure I had enough reserve for the noodles.

Cook noodles and stir in all the bits and juice from the chicken pan after it is done cooking. Don’t worry about those black bits-they actually taste best! I top mine with a little Myzithra cheese, but that is optional. Top with chicken-I cut mine up a tad.
