A while back and I cannot remember where, I had tasted some dipped cookies. I love the idea of chocolate fountains. To dip strawberries and marshmallows are awesome, but these cookies were amazing. I searched Pinterest and found a similar recipe and gave it a try. I used organic ingredients everywhere I could and omitted some things, but here they are with photos….

In a large bowl: 2C of Quick Oats and 1 package of Semi-sweet Morsels (I am a huge Ghiradelli fan and Safeway has them $1.99 this week)
In a smaller bowl: 1C organic dark brown sugar, 1/2C white sugar (I did not realize I was low on Truvia- so had to use cane) and 1C organic butter-mix together
In small bowl: 1 1/2 C Organic whole wheat (all purpose) flour, 1/2 tsp baking soda, 1/2tsp salt, 1/4C unsweetened Cocoa-mix
Add it to the butter mix and stir..I added it gradually to make mixing easier
In the now empty small bowl (you used for flour mixture) add 2 large eggs, 1tbsp organic milk, 1 1/2 tsp vanilla-mix then add to butter mixture and stir
Next add that butter mixture to the Oats/morsels bowl and stir
Drop onto lined or well-sprayed cookie sheets and bake at 350 degrees about 10-12 minutes.
Once cookies are completely cool, melt white baking chocolate or bar according to package directions. I use Ghiradelli baking pieces and add to small bowl and microwave for 30 seconds at half-power at a time, stirring in between until melted. Dip 1/4 to 1/2 of cookie, let access drip off and put back on new wax paper till white chocolate hardens. Store in sectioned container or between wax paper layers.
