Spices are a cooks best friend. Right? Can you imagine a kitchen that had no spices or salts? I can’t and because grinding and sourcing what is needed to create spices in nearly impossible inside the average home we rely on brands like Spice Islands to bottle it up for us.

Spice Islands buys many spices whole and then mills them in their facility to release the rich flavors so we can enjoy them right from the bottle. For 75 years, Spice Islands offers many spices sourced from around the world. With Valentine’s approaching, homemade dinners are romantic and can make for a great night full of sentimental memories.

We are eating a low carb diet so we have eliminated most pastas, rices and breads. I have been trying many healthier food options like these in my recipes. Our nearest health store and even common grocers offer veggie pastas which add that extra dose of nutrients to its pasta and many are less carbs than standard enriched pasta. Here is an easy favorite in our home using Spice Island’s Poultry Seasoning.

Veggie Pasta and Sausage Recipe for Dinner

Ingredients

  • Turkey Sausage (sliced)
  • 1 package of vegetable pasta
  • 1 small onion (diced)
  • 1 small bell pepper (diced)
  • 2 tsp Spice Islands Poultry Seasoning
  • 2 tbsp + 1 tbsp of olive or avocado oil
  • feta cheese and green onions to top

Instructions

  1. While pasta is cooking heat 2 tbsp oil in a skillet. Add onion, bell pepper and seasoning and saute until onion is soft. Add sliced turkey link sausage and cook through. When pasta is done, drain and add back into pasta pot. Add the sausage mixture and 1 tbsp oil and stir to combine. Dish and top with feta and green onions.

Mini Pumpkin Cheesecakes

Prep time: 15 minutes

Total time: 1 hour, 50 minutes

Yield: 18 mini cheesecakes

 

18        paper baking cups (2 1/2 inch diameter)

18        gingersnap cookies

12        ounces cream cheese, softened

3/4       cup sugar

1          tablespoon corn starch

1          teaspoon Spice Islands Pumpkin Pie Spice

2          eggs

1          cup canned pumpkin

1/3       cup light corn syrup

Heat oven to 325 F. Line muffin tin with paper baking cups. Place 1 cookie in each cup.

With electric mixer, beat cream cheese, sugar, corn starch and pumpkin pie spice. Add eggs and mix well. Add pumpkin and corn syrup; beat 1 minute.

Pour filling into liners, dividing evenly. Bake 30-35 minutes until just set.

Chill 1 hour.

Let me start by saying that when you take a spoonful of this soup it is so full of flavor you can just skip the extra carbs in toppings. I love topping chilis and soups like this, but I found myself not craving a bit of cheese or sour cream making this a very low carb soup in 30 minutes!

Loaded with nothing but beans, veggies, chicken and low-sodium broth it was a hit in my home. I looked over several recipes online and every one I saw included some sort of ingredient I didn’t have so I opened my pantry and started throwing things into a pot and magic was made. Instant Pot Recipe – Chicken Mexican Soup

Ingredients

  • 3 chicken breasts
  • 1 can (2 cups) low sodium chicken broth
  • 1 standard can of black beans (drained and rinsed)
  • 1 standard can of pinto beans (drained and rinsed)
  • 1 standard can of low sodium kernal corn
  • 1 standard can fire roasted tomatoes
  • 1 small jar or about 1 cup of black bean salsa
  • 1 packet mild taco seasoning
  • salt
  • pepper

Instructions

  1. Open all canned ingredients. Rinse and drain any and add into Instant Pot
  2. Place chicken breasts in pot sprinkled with a little S & P.
  3. Pour salsa and taco seasoning in then the broth. Give it a stir around the chicken, coating the chicken well so it is submerged.
  4. Set Instant Pot to High Pressure for 3 minutes. I like to natural release for 10-15 minutes but you can release right away
  5. Remove Chicken and shred then place back in pot and turn on Keep Warm mode until ready to serve

You will notice that my recipe includes onions and peppers (a great way to use them up before they go bad), but the picture does not show any. This is because the night I made this I wasn’t aware my husband had used up my veggies in the omelettes he made us in that days breakfast so this dish you see was minus those veggies so I added some steamed broccoli to the plate.

Ingredients

  • 2 lbs boneless chicken breast
  • 2 tbsp curry powder
  • 1 short jar of black bean salsa (about 2 cups)
  • sliced onion
  • sliced bell pepper
  • 1/4 cup chicken stock
  • 1 can coconut milk
  • Riced cauliflower

Instructions

  1. Place chicken and onions, peppers in the pot. Pour the salsa and stock over the chicken and veggies. Add the curry powder. Cover and set pressure to high for 13 minutes. Release pressure and remove chicken to slice. Add the coconut milk to the juices in the cooker and stir 1-2 minutes. Add the chicken back in while you prepare the sides. Serve over riced cauliflower

As I am writing this post to share some cocktail recipes with you I am sipping on a refreshing Sparkling Ice Pomegranate Blueberry water. INGREDIENTS
1 bottle of Santa Margherita Prosecco Superiore DOCG
8-10 frozen cranberries
½ cup granulated sugar
1 tbsp water
DIRECTIONS
Put cranberries on a skewer and rinse under cold water. Dip skewered cranberries in water, then roll in granulated sugar. Place skewers on wax paper and place in freezer for 5 minutes. Fill glass ¾ with Santa Margherita Prosecco Superiore. Place skewers on top of glass and serve.
ALTERNATE OPTION
For a slightly sweeter garnish, soak fresh or frozen berries in maple syrup overnight, then skewer and roll in sugar.

1/3 oz Raspberry Puree
1.5 oz Brooklyn Crafted Ginger Beer Mini, Lemon/Lime
Splash of Limoncello
4 oz Champagne
Squeeze of Lime Juice Fresh
Raspberries
DIRECTIONS
Stir raspberry puree, Brooklyn Crafted Mini Lemon/Lime and Limoncello in a champagne flute. Top with champagne and a squeeze of lime juice. Garnish with raspberries and enjoy!

Low Carb Chicken Pea Penne Recipe

Being on a low carb diet makes it hard to get creative. We have cut rices, most pasta and breads. Only poultry and lean pork and lots of fresh veggies and fruits. I can stare at a chicken breast a thousand hours some nights and am just flat out of creativity. Then one day you realize you have some peas, chicken and Explore Cuisine in the kitchen and crave pasta, but because we aren’t eating the sauces you just get creative anyway. Here is my Low Carb Chicken Pea Penne and it was a hit!

The only pasta we keep in our cupboard is Explore Cuisine because it is made with real veggies and lentils like edamame chickpea and green lentils. These are loaded with plant-based protein, are USDA Organic and Gluten free. They taste incredible. The closest store to me that carries Explore Cuisine is an Albertsons 30 minutes away and I will head there to stock up. I have approved this pasta for a once a week meal on our diet.

Everything is cooked separately then it all comes together with some herbs, parmesan and olive oil in the end.

Low Carb Chicken Pea Penne Recipe

Ingredients

  • 1 Box Explore Cuisine Organic Green Lentil Penne
  • Chicken Breast (cut into small pieces)
  • 1 Cup cooked Peas
  • 1/4 Cup + extra for topping Parmesan Cheese
  • 1/2 teaspoon Oregano
  • 1/4 teaspoon Basil
  • 1 Tbsp Minced Garlic
  • 1/2 Cup + 2 tbsp Olive Oil
  • 1/2 tsp Parsley
  • Salt and Pepper to taste

Instructions

  1. Cook chicken with oregano, salt, pepper, basil in 2 tbsp olive oil until done. While the chicken is cooking, boil water and cook the penne. Once penne is done, drain and set aside. I just put it back in the same pan I cooked chicken in to stay warm. In the (now empty) pasta pot cook garlic in 1/2 Cup of olive oil until browned. Add the pasta, chicken and cooked peas. Add 1/4 C parmesan and stir. plate the pasta and top with a sprinkle of parmesan and parsley.
