As a Nutritionist, Toby Amidor knows the benefits that greek yogurt has on our health and the desire for consumers to find ways to incorporate it into recipes and favorite dishes. With Toby’s background as a Nutritionist for TheFoodNetwork among other writing and teaching ventures, you can bet she has some fun ideas and recipes for you using greek yogurt as an all-purpose ingredient. The book not only contains more than 130 recipes, but you will find all the answers to your questions about the benefits of greek yogurt vs. traditional yogurt in the first Chapter named ‘Greek Yogurt: A Superstar Food’.
I took the Banana Walnut recipe and because I did not have walnuts, I used dark chocolate chips instead. My boys devoured them and the best part is instead of butter, I used the healthier substitute of greek yogurt! There is zero butter, only 3tbsp of oil and 1/2 cup of plain greek yogurt. They were moist even days later.
To lessen the calories, I even followed the recipe exactly and as it had walnuts as a topping I did the same with the chocolate so it was just a few pieces on top-not throughout the muffin.
