What is Celiac disease?
Simply put-it is a gluten allergy. When those with celiac disease consume the protein, gluten, that is found in many products containing wheat, rye and barley they develop a reaction where their small intestines are under attack. This auto immune disease attacks the small intestines by damaging the villi which are small finger-like projections inside the small intestines that promote nutrient absorption. When these are damaged, food nutrients cannot be absorbed into the body. The only treatment is a gluten-free diet. To keep eating gluten and ignore this disease may lead to other health problems such as MS, anemia, infertility and other conditions.
